3.3% salt content tradionally made Welsh butter carefully cold smoked over Welsh oak.

Another idea from a customer at Liverpool Farmer's Market---" Have you any smoked mashed potatoes ???????

it's a big thing in Ireland -- luckily someone overheard and said you don't smoke the potatoes you smoke the butter!!

and it does make wonderful mashed potatoes or imparts a smokey flavour to sauces and soups.
