As with plain chicken breast but dusted with garlic and herbs prior to smoking so that it infuses into the chicken (200gms is roughly the weight of one (1) chicken breast.)
N.B. Any apparent blood spots in the meat are NOT a result of inadequate cooking time but a capilliary action of the salt during the brining process.
