Prime fillets of Wild Anglesey river eel (Anguilla anguilla) hot smoked ready to eat.
We fish the eels ourselves in lakes on Anglesey using fyke nets fitted with otter guards .

The eels are held alive in aerated tanks at Derimon until required.
They are at their best during the winter months ,as they hot smoke best in their own fat reserves ,as Silver eels .
